Vegan Scallop Spaghetti with Mushroom XO Sauce

Are you looking for a vegan Asian-fusion pasta recipe? Well, you have come to the right place.This spaghetti is tossed with the flavorful mushroom vegan XO sauce and topped with heart of palm “scallops.”

The “Scallops”

For awhile now, I have been on a search for the perfect "scallops." I have seen people make it with king oyster mushrooms, but I felt that the mushroom was overpowering the dish already with the XO sauce and I needed something else that can imitate "scallops, and heart of palm came to mind! It is super easy to prepare them, especially when you use canned ones like I do! All I do is make some slice marks on them and sear them until they are golden brown on each side in vegan butter or olive oil.

Vegan Scallop Spaghetti with Mushroom XO Sauce


Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

Servings: 3 servings


INGREDIENTS:


Heart of Palm “scallops”

  • 1 14oz can of heart of palm

  • 2 tbsp oil

Pasta

INSTRUCTIONS:

  1. Drain and pat dry. With a knife, score the surface by making double crosses.

  2. In a pan, heat vegetable oil until sizzling. Sear each “scallop”until golden brown.

  3. Once you have cooked all of the “scallops,” add the XO sauce. Coat the scallops with XO sauce and take off the heat and set aside.

  4. Cook pasta according to the directions on the package.

  5. Add cooked pasta into sauce. Add some pasta water, and toss to combine.

  6. Serve hot and enjoy.
