Vegan Roasted Pepper Hummus
Super easy to make and its the perfect healthy snack and appetizer to serve!

Forget about the traditional hummus when you can have these roasted pepper hummus!
I never knew just how delicious the combination of hummus, roasted pepper, olive and a hint of lemon olive oil can be. But what's the best part about all of this? It comes together in less than 15 minutes!

Vegan Roasted Pepper Hummus
Prep Time: 5 minutes
Cook Time: 5 minutes
Total Time: 10 minutes
Servings: 3-4 servings
INGREDIENTS:
1 15 oz can chickpea with 1/4 cup of chickpea juice
1 cup roasted pepper. (homemade or jarred)
1/4 cup of tahini or sesame paste
1 garlic clove
2 tsp cumin (optional)
1 tsp salt
3 tbsp of lemon juice
4 tbsp lemon infused olive oil or original olive oil
a few of kalamata olives
Vegan friendly Bread or cracker for serving
INSTRCUTIONS:
Drain chickpea from a can and save 1/4 cup of juice.
Pulse chickpea, chickpea juice, roasted pepper, tahini, cumin, garlic, lemon juice and salt together in a food processor.
Slowly drizzle in 2 tbsp of olive oil until creamy.
Serve by drizzling some olive oil, kalamata olives and bread.
