Vegan Mushroom XO Sauce

This is a famous Chinese sauce that is used in many dishes and this vegan version is a quick, simple and delicious way to spice up your dishes!

Vegan Mushroom XO Sauce
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes
Servings: 3 tbsp
INGREDIENTS:
6-8 rehydrated dried shiitake mushroom, diced fine
1/2 yellow onion, diced fine
4 tbsp of soy sauce
4 tbsp of mushroom water
1/4 tsp red pepper
1/4 tsp white pepper to taste
4 tbsp tbsp oil
INSTRUCTIONS:
Dice onion and rehydrated mushroom. (soak the mushroom in hot water for 10 minutes and save the water!)

2. In a pan, heat 2 tbsp of oil and cook onion until translucent and fragrant. about 5 minutes. Stir in mushroom and red pepper and cook until mushroom is fragrant and on the dry side. About 5-10 minutes.
3. Stir in soy sauce, water and white pepper. Cook for another 5 minutes.
4. Add in additional two tbsp of oil and serve with your favorite dishes.
