Vegan Curry Chicken Salad

The best vegan salad you have ever tasted.

Curry chicken salad is probably one of my most favorite salads in comparison to the other ones. I still remember the first time when I had it in NY. The deli had put raisins and nuts in their mixture and I was so taken aback at how this combination could have possibly worked so magically, but it really did. The sweet, nutty and savory notes were all there and when its put on bread= heaven!


This recipe is really easy to prepare and after its all made, chill for an hour or until mixture gets cold and serve on a piece of bread and you will have yourself a very delicious snack, lunch or even dinner!

Vegan Curry Chicken Salad

Prep Time: 15 minutes

Cook Time: 10 minutes

Total Time: 25 minutes

Servings: 4 Servings


INGREDIENTS:

INSTRUCTIONS:

  1. Soak soy curl in hot water for 10-15 minutes.

  2. Heat oven to 375F and roast cashew for 10-15 minutes or until golden brown and fragrant.

  3. Combine mayonnaise, curry powder, roasted cashews, green onion, raisins, salt and pepper to taste and mix well.

  4. Drain soy curl and combine into mayonnaise mixture. Mix well and chill for at least an hour.

  5. Serve cold and enjoy.
