Sweet and Spicy Noodle With Broccoli and Crispy Tofu

There's nothing better than a bowl of comforting sweet and spicy noodles, especially when it is served with crispy tofu and vegetables.
Sweet and Spicy Noodle With Broccoli and Crispy Tofu

Total Time: 30 minutes
Servings: 2-4 servings
INGREDIENTS:
2-4 serving worth of noodles
100-150g block extra firm tofu
Frozen vegetables (I used frozen broccoli. cook according to package)
1/2 cup corn starch
Spring onions and sesame seeds, for topping
Salt and Pepper
SAUCE
3/4 cup room temperature water
4 tbsp soy sauce
1- 1 1/2 tbsp corn starch
2 to 3 tbsp maple syrup
1/2 tbsp garlic chili sauce or other chili sauce. Adjust according to desired heat
1 tbsp rice vinegar
1/4 tsp ground pepper
1 tbsp sesame oil
INSTRCUTIONS:
Mix all of the sauce ingredients in a bowl and mix until incorporated.
Drain and dry tofu. Cut into cubes and dust with corn starch.
In a pan, heat with some oil and cook tofu cubes until crispy and golden brown. About 5 minutes each. Repeat and set aside.
Boil a pot with water. Cook noodles until chewy with a bite.
While the noodles are cooking, heat a pan with oil and saute veggies. Add in the sauce. Leave to simmer over medium heat.
Add the cooked noodles and mix with the sauce. Cook over med. high heat until the noodles absorb the sauce & sauce thickens. Stir in crispy tofu. Season with salt and pepper to taste, if needed. (I directly add the noodles into the pan)
Garnish with sesame seeds and spring onions, if desired. Enjoy while hot!
