Quinoa Veggie Bowl (Vegan and Gluten Free)

This is a bowl that's packed with flavor, color, and health.

Why Quinoa?

They are both vegan and gluten free and packed with so many nutrients such as protein, fiber, magnesium, potassium and many other benefits including in helping us lose weight!

Quinoa Veggie Bowl (Vegan and Gluten Free)

PREP TIME: 5 Minutes

COOK TIME: 30 Minutes

TOTAL TIME: 35 Minutes

SERVINGS: 3 Servings


  • 3 cups of cooked quinoa. Cook according to package

  • 1/2 jar of roasted red peppers from Mezzetta

  • 1 can of chickpeas. Drained

  • 1 can of beets. Drained

  • 2 bags of frozen cauliflower or 1 heads of fresh

  • 1/4 cup of olive oil

  • 1 tbsp of cumin

  • 1 tbsp oregano

  • Salt and pepper


  1. Preheat oven to 375F

  2. Cook quinoa according to package.

  3. Cook cauliflower according to package in microwave or stovetop.

  4. Drain excess liquid after cooking the cauliflower and place on a foil lined cooking tray.

  5. Place red pepper, chickpea, beets on a foil lined cooking tray. Season with herbs and salt and pepper.

  6. Place both tray in oven and cook for about 20-30 minutes.

  7. If cooking fresh cauliflower, cook until fork tender.

  8. Fluff quinoa with fork after its done.

  9. Place quinoa in a bowl and top with roasted vegetables.

  10. Serve hot and enjoy!
